La vente de champignons sauvages sur les marchés relève d’une réglementation générale nationale et européenne, ainsi que d’une réglementation spécifique essentiellement décentralisée. Hormis quelques espèces réglementées au niveau national, les maires et préfets restent libres de définir les espèces autorisées à la vente et les mesures de contrôle à l’échelle locale. Les disparités qui en résultent sont incompatibles avec des perspectives européennes. Aussi, une réflexion sur un projet d’harmonisation par un texte national a débuté. À partir de l’enquête réalisée auprès de 235 villes et des 96 départements de France métropolitaine, le présent travail dresse un état des lieux des différents textes actuellement en vigueur en France, listant les espèces autorisées à la vente, définissant les modalités de contrôle prévues et relevant celles réellement appliquées au niveau des différentes localités. Ces résultats ont ensuite été analysés dans l’optique d’un projet d’harmonisation, et des recommandations pour l’établissement d’une réglementation nationale sont proposées.
