Bachelor Thesis from the year 2014 in the subject Business economics - Supply, Production, Logistics, University for Development studies, course: Bsc Agribusiness management and finance, language: English, abstract: This study aimed at analyzing the benefits, cost and constraints of production of quality Shea butter in relation to production methods amongst processors in Tamale Metropolis. Specifically, it was to assess cost-benefits of production of quality butter. Secondly, to determine the factors that influences marketable quality butter. Lastly, to analyze the constraints to the production of quality marketable Shea butter. The study was conducted in 4 communities in Tamale Metropolis because these are the communities with abundant shea butter processors. A total of 80 respondents were interviewed with 20 respondents being selected from each of the communities using snowball sampling. The average costs, average revenues and profits were calculated on yearly basis. The study revealed that averagely individual processes 3 bags (90kg each) of Shea nuts in a week and this yield 3 units of shea butter which weighs 25kg each. This yields an average of 75kgs of Shea butter selling at an average price of GHc73. A processor has an average total cost of GHc8609 per year, average total revenue of GHc10512 per year and the profit yielded is GH1622.8 per year. This gave a benefit cost ratio of 1.2:1 which implied that producing quality butter was profitable. Probit model was used analyze the factors influencing the quality of Shea butter. Out of the seven (7) estimated coefficients number of years in processing, improvement in technology and orderly processing procedures significantly explains the likelihood that a respondent produces quality Shea butter. The study also revealed that the major problems encountered by processors were; lack of capital to purchase enough nuts and expand production, unstable markets, high prices of nuts, dangers associated with picking nuts from the bush, shortage of water in lean season. The results of the Kendall‟s coefficient of concordance revealed fair level of agreement (40%) among respondents. On recommendation, Shea board should be rejuvenated to function effectively.

Shea butter is a versatile plant fat extracted from kernels of shea nuts, seeds of shea trees (Vitellaria paradoxa). Shea butter has long been used in sub-Saharan Africa for medicinal, culinary, and other applications and serves as a cocoa butter equivalent in the manufacture of chocolate as well as an ingredient in cosmetics. Shea butter, rich in unsaturated fatty acids undergoes hydrolytic and oxidative degradation during post-harvest processing and storage, resulting in inconsistent and degraded quality and limited shelf-life. The objective of this study was to assess important quality characteristics of shea butter. Seven West African shea butters were analyzed to measure physicochemical parameters by wet chemical tests and to measure chemical composition by gas chromatographic analysis. Physical properties were consistent among samples and within the range of typical shea butter. The samples also shared similar chemical compositions, showing palmitic (3.36-4.44 % of total fatty acids), stearic (39.74-44.62 %), oleic (40.71-44.48 %), and linoleic acids (5.73-6.41 %) as the major fatty acids and l̂̂ł-amyrin having anti-inflammatory property (57.26-64.37 % of total sterols and triterpenes) as the major unsaponifiable matter. Moisture, insoluble impurities, free fatty acids, and peroxide values were needed to be controlled. Free fatty acid level was the most variable parameter, ranged from 1.07 to 8.56 %. Peroxide value was low enough except the one which was as high as 15.32 mEq/kg. Total unsaponifiable matters were measured lower (2.21-4.18 %) compared to the previous studies (4-11 %) but still higher than many other plant oils and fats (~2 %). This study also aimed at identifying the protective effect of selected synthetic (BHT) and natural (rosmarinic and gallic acids) antioxidants on shea butter from oxidation. Peroxide value, conjugated dienes, thiobarbituric acid reactive substances, and the amount of major fatty acids were measured as oxidative parameters at 0, 72 and 144 hours while the control and samples with 0.02 % of antioxidants were stored at 90 °C with air flow. The antioxidants were significantly effective in protecting shea butter from oxidation and no significant difference in the effect of synthetic and natural antioxidants was found.

Very often, efforts to improve value chains miss out half of the population - the female half. It is men who sell the products and who keep the money from those sales. The women, who do much of the work but are not recognized for it, often have to work even harder to meet ever-increasing quality requirements. But they see few of the benefits. How to change this? This book explains how development organizations and private entrepreneurs have found ways to improve the position of women in value chains - especially small scale women farmers and primary processors. It outlines five broad strategies for doing this: (1) working with women on typical "women's products" such as shea, poultry and dairy; (2) opening up opportunities for women to work on what are traditionally "men's commodities" or in men's domains; (3) supporting women and men in organizing for change by building capacity, organization, sensitization and access to finance; (4) using standards and certification to promote gender equity, and (5) promoting gender-responsible business.
