Factors believed to have the greatest influence on meat quality were cattle genetics (overall rank: 1st) and cattle nutrition (overall rank: 2nd). Additionally, the SWOT analysis identified Ohio meat processors consider “locally raised” a strength, meanwhile uninformed livestock producers was considered a weakness in addition to value added/niche markets an opportunity and “uninformed customers” / “lack of education” (among livestock producers and customers) a threat to their businesses. Lastly, 100% of the Ohio meat processors surveyed order in boxed beef to sustain their retail cases/stores. Moreover, 86% of those meat processors indicated boxed beef made up 50% or less of their retail sales. Overall, the Ohio Beef Quality Audit – 2021 demonstrated similarities to beef carcass characteristics at the national level. The current audit primarily served as a starting point in collecting beef carcass data to better assist beef producers in understanding what is being produced. This understanding could lead to improved livestock practices to better fit the needs of the Ohio beef industry. Furthermore, this information can, and will provide an opportunity to connect livestock practices to end products. Lastly, comments from Ohio meat processors regarding their needs are critical in telling the story of Ohio’s meat industry from the production level to the end-user.
