Ce projet de recherches fut proposé pour tenter de définir les champs d'applications scientifiques et industrielles potentielles de la spectrométrie IRTF. On propose un plan d'implantation de cette technologie au niveau des principales situations analytiques rencontrées dans l'industrie laitière (dosage des composés de produits laitiers en utilisant différentes méthodes d'échantillonnage spectroscopique et contrôle de procédés de fabrication laitière). Ce travail a impliqué la mise en place de nouvelles méthodologies d'acquisition et de traitements de données. On a développé des applications de procédures analytiques multidimensionnelles et on propose des solutions informatiques. On propose alors des applications pour cette méthode instrumentale tout au long de la chaine de transformation du lait, pratiquement de la vache au consommateur. Ce travail consiste en la détermination de l'âge et de la population bactérienne de laits crus, l'analyse qualitative et quantitative de lait liquide, le suivi de cinétique de coagulation enzymatique du lait avec la définition d'un nouveau paramètre rhéologique, l'analyse qualitative et quantitative de fromage frais et le suivi de l'affinage de plusieurs fromages avec la prédiction de leur âge ainsi que leur teneur en azote soluble. Aucun de ces résultats n'a actuellement quitté le laboratoire de R. et D. Toutefois, le travail reporté dans cette thèse pourrait être considéré comme une étude de faisabilité de la méthode et comme une base possible pour de nouveaux travaux de recherche et développement utilisant la spectrométrie IRTF.
