The significance of food and feasting to Pre-Columbian Mesoamerican cultures has been extensively studied by archaeologists, anthropologists and art historians. Foodways studies have been critical to our understanding of early agriculture, political economies, and the domestication and management of plants and animals. Scholars from diverse fields have explored the symbolic complexity of food and its preparation, as well as the social importance of feasting in contemporary and historical societies. Cecilia Valdés is arguably the most important novel of 19th century Cuba. There are the elite social circles of European and New World Whites, the rich culture of the free people of color, the class to which Cecilia herself belonged, and then the slaves, divided among themselves between those who were born in Africa and those who were born in the New World, and those who worked on the sugar plantation and those who worked in the households of the rich people in Havana. In Writing across Cultures, Rama extends the Cuban anthropologist Fernando Ortiz's theory of transculturation far beyond Cuba, bringing it to bear on regional cultures across Latin America, where new cultural arrangements have been forming among indigenous, African, and European societies for the better part of five centuries.
