Most people understand that Louisiana is unique in its history, people, and food; not everyone realizes that the food is practical, easy to prepare, economical, and delicious. This book represents a large portion of my life because it influences so much of our enjoyment. Practically all the recipes in my Cookbook are from our immediate and extended families, with the exception of a few that have been included from our cherished friends. The Recipes in this Cookbook are exemplary of the style and manner of cooking that developed in Louisiana along the Mississippi River between Baton Rouge and New Orleans and along Bayou Lafourche in Thibodaux. This area includes the parishes of St. James, St. John the Baptist, and Lafourche. Louisiana's history is truly unique. The original inhabitants of this area were Native American, Spanish, German, French, and some English. Families were usually large, and survival depended entirely on the grace of God, the land, and its bounty. Flavors produced in Louisiana cooking are derived from God's bounty. They do not emanate from those little plastic containers on the grocery store shelves with long lists of unpronounceable ingredients or from some flavoring factory elsewhere in the world. This Cookbook is dedicated to my mother-in-law, Aimee (Marie Waguespack) Becnel, because of the immense love she held for people and good food. It was this great lady who taught me the true meaning of "Southern Hospitality." She raised five children and helped mold many others throughout her years as a teacher. She always had great joy in meeting people; one of her favorite activities was inviting new friends over for her famous Vacherie pork roast, white beans, sweet potato, and pecan pie dinners. Anyone could visit for hours around her table feeling entertained, valued, and loved. It was not uncommon for her to meet a tourist at one of the plantations, particularly Laura Plantation, where she was born, and have them over for dinner that same day. This lifestyle is so much a part of us all! I hope you will enjoy experiencing this Cookbook.
