Diet Diversification and Health Promotion

Diet Diversification and Health Promotion PDF Author: I. Elmadfa
Publisher:
ISBN: 9783318011838
Category : Medical
Languages : en
Pages : 0

Book Description
About half of the global burden of disease is due to chronic noncommunicable diseases such as obesity, metabolic disorders, cardiovascular diseases and cancer, which are all related to modifiable risk factors such as unbalanced diet and malnutrition as well as determinants such as behavior and lifestyle. Dietary patterns during the last few decades have undergone a general shift towards high energy density and fatty foods combined with a low proportion of plant components. The resulting diet profile has proven inadequate to meet the physiological needs of a healthy human life. A comprehensive and highly valuable source of knowledge for all professionals interested in the underlying causes of today's major health challenges, this publication gives an in-depth view of the various methods of monitoring and addressing this precarious situation: impact of gender and age on eating behavior, role of a vegetarian lifestyle, processed and fortified foods, organic foods, ethnic food culture, and consumer choice.

Role of Trace Elements for Health Promotion and Disease Prevention

Role of Trace Elements for Health Promotion and Disease Prevention PDF Author: Brittmarie Sandström
Publisher: Karger Medical and Scientific Publishers
ISBN: 380556628X
Category : Medical
Languages : en
Pages : 177

Book Description
Trace elements are involved in almost every biochemical process in body cells, and inadequacy or unbalance of trace element supply consequently affects a number of physiological functions. Recently developed and improved analytical techniques have strongly contributed to an increased understanding of the role of trace elements for health and disease. This publication gives an excellent overview of the present knowledge concerning their significance in a number of conditions. The specific problems in evaluating trace element intakes and status are highlighted. An adequate nutrient supply is particularly important in periods of growth, especially for infants, children and pregnant women. Improvement of trace element status through food fortification or supplementation is another central theme of this volume. Moreover, the biochemical and epidemiological evidences that they play a role in the prevention of coronary heart disease, cancer and osteoporosis are discussed. To keep track of the exciting developments in the field of trace elements, this publication is important for nutritionists, dietitians, pediatricians, general practitioners, public health professionals and food technologists alike.

Functions of Vitamins Beyond Recommended Dietary Allowances

Functions of Vitamins Beyond Recommended Dietary Allowances PDF Author: D. Hornig
Publisher:
ISBN: 9783318005783
Category : Medical
Languages : en
Pages : 0

Book Description
It is generally accepted that the basic needs of vitamins are covered by the so-called Recommended Dietary Allowances, which were originally established mainly to prevent deficiencies. However, there is more and more scientific evidence accumulating that several vitamins have additional functions, each requiring a different, but usually higher amount than the one set for the prevention of the respective classical vitamin deficiency. Such additional functions include the radical scavenging effect of various antioxidant vitamins or the role of folate in the prevention of neural tube defects. This publication wants to substantiate the relations between the scientific evidence for selected functions and the respective vitamin intake; moreover, as some of the functions in question require several vitamins due to synergistic interactions, attention will also be paid to this aspect. Special measures could in the future contribute to lower public health costs by helping to decrease the incidence of costly chronic diseases: Guidelines advising a much higher intake of fruits and vegetables have already been established to reduce the risk for certain diseases such as some types of cancer and coronary heart disease. Covering a wide spectrum of topics, this publication will not only be of interest to nutritionists, pathophysiologists and epidemiologists, but also to Public Health authorities and food and vitamin manufacturers.
