Dietary Reference Intakes for Vitamin A, Vitamin K, Arsenic, Boron, Chromium, Copper, Iodine, Iron, Manganese, Molybdenum, Nickel, Silicon, Vanadium, and Zinc

Dietary Reference Intakes for Vitamin A, Vitamin K, Arsenic, Boron, Chromium, Copper, Iodine, Iron, Manganese, Molybdenum, Nickel, Silicon, Vanadium, and Zinc PDF Author: Institute of Medicine
Publisher: National Academies Press
ISBN: 0309072905
Category : Medical
Languages : en
Pages : 798

Book Description
This volume is the newest release in the authoritative series issued by the National Academy of Sciences on dietary reference intakes (DRIs). This series provides recommended intakes, such as Recommended Dietary Allowances (RDAs), for use in planning nutritionally adequate diets for individuals based on age and gender. In addition, a new reference intake, the Tolerable Upper Intake Level (UL), has also been established to assist an individual in knowing how much is "too much" of a nutrient. Based on the Institute of Medicine's review of the scientific literature regarding dietary micronutrients, recommendations have been formulated regarding vitamins A and K, iron, iodine, chromium, copper, manganese, molybdenum, zinc, and other potentially beneficial trace elements such as boron to determine the roles, if any, they play in health. The book also: Reviews selected components of food that may influence the bioavailability of these compounds. Develops estimates of dietary intake of these compounds that are compatible with good nutrition throughout the life span and that may decrease risk of chronic disease where data indicate they play a role. Determines Tolerable Upper Intake levels for each nutrient reviewed where adequate scientific data are available in specific population subgroups. Identifies research needed to improve knowledge of the role of these micronutrients in human health. This book will be important to professionals in nutrition research and education.

Zinc in Human Biology

Zinc in Human Biology PDF Author: Colin F. Mills
Publisher: Springer Science & Business Media
ISBN: 1447138791
Category : Medical
Languages : en
Pages : 394

Book Description
The present volume is one of a series concerned with topics considered to be of growing interest to those whose ultimate aim is the understanding of the nutrition of man. Volumes on Sweetness, Calcium in Human Biology and Sucrose: Nutritional and Safety Aspects, have already been published, and another, on Dietary Starches and Sugars in Man: A Comparison, is in preparation. Written for workers in the nutritional and allied sciences rather than for the specialist, they aim to fill the gap between the textbook on the one hand and the many publications addressed to the expert on the other. The target readership spans medicine, nutrition and the biological sciences generally and includes those in the food, chemical and allied industries who need to take account of advances in these fields relevant to their products. Funded by industry but with an independent status, the Inter national Life Sciences Institute (ILSI) is a non-profit organization founded to deal objectively with the numerous health and safety issues that today concern industry internationally. ILSI sponsors scientific research, organizes conferences and publishes monographs relative to these problems. London Ian Macdonald March 1988 Series Editor Preface This volume has been prepared at a time when interest in both the biological roles of zinc and its nutritional significance is growing rapidly.

Chelates In Nutrition PDF Author: Howard F Kratzer
Publisher: CRC Press
ISBN: 135107895X
Category : Medical
Languages : en
Pages : 178

Book Description
A comprehensive reference text explores the nature of chelating agents and the underlying reasons for their metal-binding properties and discusses the mechanisms of absorption for various metals and the possible role of chelating agents in influencing the utilization of certain minerals. Topics include: the physico-chemical characteristics of chelates and chelation and their measurements; the bioavailability of metals and proteins as ligands; the role of phytic acid and other phosphates as chelating agents; miscellaneous chelates (oxalic acid, ionophores, clays); the chelation, uptake, and transport of zinc, and the influence of various foods and synthetic chelates on zinc availability; the chelation, and bioavailability of iron, and the effect of various chelating agents on nonheme iron absorption; chelation of copper by food substances; the chelation of miscellaneous minerals; the role of iron and copper chelation in reproduction; chelate toxicity; the use chelates in metal detoxification and therapy; and the use of chelates for removing metals from dietary ingredients. Technical data and illustrations are presented throughout the text, and reference citations are appended to each of the 12 principal text chapters
