Excerpt from Economies in Dairy Farming Some two years since, I was asked by the Proprietors of Country Life to write for them a book on Dairy Farming. Although flattered by such a request, at that time I felt obliged to decline because my time was fully occupied, and also it appeared to me that so much having been already written on the subject by older and more experienced men, to write anything on the same lines would be a work of supererogation. Thinking over the matter subsequently, in connection with the Butter Test and Milking Trials with which I have been associated during the past ten or twelve years, and recollecting the short, indeed, almost meagre reports which have been given of each such trial (not at all commensurate with the expenses incurred in carrying them out), I felt that perhaps it was my duty to detail at greater length my experiences generally with regard to the whole question of "manufacturing" milk, as noted from time to time by me at those trials.
