Water is not only used in the domestic context, but also in agriculture and industry in the production of commercial goods, from food to paper. The water footprint is an indicator of freshwater use that looks at both direct and indirect use of water by a consumer or producer. The water footprint of an individual, community or business is defined as the total volume of freshwater that is used to produce the goods and services consumed by the individual or community or produced by the business. This book shows how the water footprint concept can be used to quantify and map the water use behind consumption and how it can guide reduction of water use to a sustainable level. With a number of case studies, it illustrates water use along supply chains and that water consumption at one place is often linked to water use at another. For example, it is calculated that it takes 15,000 litres of water to produce 1 kg of beef, or 8,000 litres of water to produce a pair of jeans. The book shows that imports of water-intensive products can highly benefit water-scarce countries, but also that this creates a dependency on foreign water resources. The book demonstrates how water-scarce regions sometimes, nevertheless, use lots of water for making export products. It raises the issue of sustainable consumption: how can consumers, businesses and governments get involved in reducing the water footprints of final consumer goods?

The current analysis was conducted to evaluate the potential of nutritional, manure and animal husbandry practices for mitigating methane (CH4) and nitrous oxide (N2O) - i.e. non-carbon dioxide (CO2) - GHG emissions from livestock production. The Clean Water Act (CWA) requires that wetlands be protected from degradation because of their important ecological functions including maintenance of high water quality and provision of fish and wildlife habitat. However, this protection generally does not encompass riparian areasâ€"the lands bordering rivers and lakesâ€"even though they often provide the same functions as wetlands. Growing recognition of the similarities in wetland and riparian area functioning and the differences in their legal protection led the NRC in 1999 to undertake a study of riparian areas, which has culminated in Riparian Areas: Functioning and Strategies for Management. The report is intended to heighten awareness of riparian areas commensurate with their ecological and societal values. The primary conclusion is that, because riparian areas perform a disproportionate number of biological and physical functions on a unit area basis, restoration of riparian functions along America's waterbodies should be a national goal.

The Technical Advisory Group (TAG) for Water Use Assessment, composed by 30 international experts, has developed guidelines on water footprinting for livestock supply chains. The mandate of the Water TAG was to provide recommendations to monitor the environmental performance of feed and livestock supply chains over time so that progress towards improvement targets can be measured; apply the guidelines for feed and water demand of small ruminants, poultry, large ruminants and pig supply chains; build on and go beyond the existing FAO LEAP guidelines; and pursue alignment with relevant International Organization for Standardization (ISO) standards, specifically ISO 14040, ISO 14044 (ISO, 2006b and 2006a) and ISO 14046 (ISO, 2014). The guidelines on water use assessment include the impact assessment: the assessment of the environmental performance related to water use of a livestock-related system by assessing potential environmental impacts of blue water consumption following the water scarcity footprint according to the framework provided by ISO 14046 (ISO, 2014); and the assessment of the system’s productivity of green and blue water. The guidelines are thus intended to support the optimization of use of water resources and the identification of opportunities to decrease the potential impacts of water use in livestock production. The Water TAG guidance is relevant for livestock production systems, including feed production from croplands and grasslands, and production and processing of livestock products (cradle-to-gate). It addresses all livestock production systems and livestock species considered in existing LEAP animal guidelines: poultry, pig, small ruminant and large ruminant supply chains.

The National Research Council's Science and Technology for Sustainability Program hosted two workshops in 2011 addressing the sustainability challenges associated with food security for all. The first workshop, Measuring Food Insecurity and Assessing the Sustainability of Global Food Systems, explored the availability and quality of commonly used indicators for food security and malnutrition; poverty; and natural resources and agricultural productivity. It was organized around the three broad dimensions of sustainable food security: (1) availability, (2) access, and (3) utilization. The workshop reviewed the existing data to encourage action and identify knowledge gaps. The second workshop, Exploring Sustainable Solutions for Increasing Global Food Supplies, focused specifically on assuring the availability of adequate food supplies. How can food production be increased to meet the needs of a population expected to reach over 9 billion by 2050? Workshop objectives included identifying the major challenges and opportunities associated with achieving sustainable food security and identifying needed policy, science, and governance interventions. Workshop participants discussed long term natural resource constraints, specifically water, land and forests, soils, biodiversity and fisheries. They also examined the role of knowledge, technology, modern production practices, and infrastructure in supporting expanded agricultural production and the significant risks to future productivity posed by climate change. This is a report of two workshops.
