As a rule figures for the composition of the quarters and sides of meat were calculated from the composition and weight of the cuts making up the larger portion, and are not included in the estimate as direct analyses. The number of sides thus analyzed were, beef, 13; veal, 6; lamb, 3; mutton, 32; pork, 11. Number of analyses of specimens of American foods included in the compilation from which the figures in the tables of composition of foods were obtained.
