This Special Issue compiles 11 scientific works that were presented during the International Symposium on Thermal Effects in Gas Flow in Microscale, ISTEGIM 2019, held in Ettlingen, Germany, in October 2019. This symposium was organized in the framework of the MIGRATE Network, an H2020 Marie Skłodowska-Curie European Training Network that ran from November 2015 to October 2019 (www.migrate2015.eu). MIGRATE intends to address some of the current challenges in innovation that face the European industry with regard to heat and mass transfer in gas-based microscale processes. The papers collected in this book focus on fundamental issues that are encountered in microfluidic systems involving gases, such as the analysis of gas–surface interactions under rarefied conditions, the development of innovative integrated microsensors for airborne pollutants, new experimental techniques for the measurement of local quantities in miniaturized devices and heat transfer issues inside microchannels. The variety of topics addressed in this book emphasizes that multi-disciplinarity is the real common thread of the current applied research in microfluidics. We hope that this book will help to stimulate early-stage researchers who are working in microfluidics all around the world. This book is dedicated to them!

Although methods to assess or self-monitor intake may be considered similar, the intended function of each is quite distinct. For the assessment of dietary intake, methods aim to measure food and nutrient intake and/or to derive dietary patterns for determining diet-disease relationships, population surveillance or the effectiveness of interventions. In comparison, dietary self-monitoring primarily aims to create awareness of and reinforce individual eating behaviours, in addition to tracking foods consumed. Advancements in the capabilities of technologies, such as smartphones and wearable devices, have enhanced the collection, analysis and interpretation of dietary intake data in both contexts. This Special Issue invites submissions on the use of novel technology-based approaches for the assessment of food and/or nutrient intake and for self-monitoring eating behaviours. Submissions may document any part of the development and evaluation of the technology-based approaches. Examples may include: web adaption of existing dietary assessment or self-monitoring tools (e.g., food frequency questionnaires, screeners) image-based or image-assisted methods mobile/smartphone applications for capturing intake for assessment or self-monitoring wearable cameras to record dietary intake or eating behaviours body sensors to measure eating behaviours and/or dietary intake use of technology-based methods to complement aspects of traditional dietary assessment or self-monitoring, such as portion size estimation.

Iodine, a key component of thyroid hormones, is considered an essential micronutrient for proper health at all life stages. Indeed, an inadequate dietary intake of iodine is responsible for several functional and developmental abnormalities. The most serious consequences of iodine deficiency include hypothyroidism, early abortion, low birth weight, preterm delivery, neurocognitive impairment, and mental retardation. On the other hand, the consequences of mild-to-moderate iodine deficiency, such as goiter, are less well understood but represent an important priority for research and public health practice. Over the last several decades, many countries across the globe have introduced mandatory salt iodization programs, which have dramatically reduced the number of iodine-deficient countries. However, despite substantial progress worldwide, mild-to-moderate deficiency is still prevalent even in many developed countries. Thus, the ongoing monitoring of the population iodine status remains crucially important, and attention may need to be paid to vulnerable life stage groups.
