The Genetics of Cattle, 2nd Edition

The Genetics of Cattle, 2nd Edition PDF Author: Dorian Garrick
Publisher: CABI
ISBN: 1780642210
Category : Science
Languages : en
Pages : 642

Book Description
Since the time of domestication more than 10,000 years ago, cattle have played an increasingly crucial role in the development of human civilizations. Progress has been quite remarkable since the turn of the century; the sequencing of the bovine genome in 2009 launched new avenues for furthering our understanding of theoretical and practical aspects of cattle genetics. Covering a vast array of questions, this book reviews major topics from molecular and developmental genetics, disease resistance and immunogenetics to genetic improvement of dairy and beef breeds, addressing all current problems in the field. This second edition includes a new team of authors and completely new chapters on the genetics of fat production, nutrition, feed intake and efficiency, growth and body composition. Fully updated throughout, it provides a valuable resource on cattle genetics for researchers, breeders, veterinarians and postgraduate students.

Interventions for the Control of Non-typhoidal Salmonella Spp. in Beef and Pork

Interventions for the Control of Non-typhoidal Salmonella Spp. in Beef and Pork PDF Author: Food and Agriculture Organization of the United Nations
Publisher: Microbiological Risk Assessmen
ISBN: 9789241565240
Category : Business & Economics
Languages : en
Pages : 0

Book Description
"Non-typhoidal Salmonella spp. are estimated to cause 93.8 million cases of acute gastroenteritis and 155,000 deaths globally each year, approximately 85% of which are estimated to be foodborne, establishing Salmonella as having a significant public health and economic impact on society. Pork products are among the top food-borne sources of Salmonella globally, while beef products have been implicated in several large outbreaks in recent years. Contamination of beef and pork with Salmonella can also have a negative impact on the agri-food and trade sectors due to costly recalls of products and by limiting market access. FAO and WHO have undertaken a systematic review of the available evidence on interventions to control Salmonella in beef and pork from primary production through processing. This information was then considered by an expert meeting which provided recommendations on efficacious interventions. This report presents the outcome of those deliberations as well as the review of studies on which the discussions were based, providing the reader with a wealth of up to date information on the currently available interventions for the control of Salmonella in beef and pork."--Publisher's description.

Improving the Sensory and Nutritional Quality of Fresh Meat

Improving the Sensory and Nutritional Quality of Fresh Meat PDF Author: Joseph Kerry
Publisher: Elsevier
ISBN: 1845695437
Category : Technology & Engineering
Languages : en
Pages : 687

Book Description
Understanding of the scientific basis of quality attributes in meat is becoming more advanced, providing more effective approaches to the control of meat eating and technological quality. This important collection reviews essential knowledge of the mechanisms underlying quality characteristics and methods to improve meat sensory and nutritional quality.Part one analyses the scientific basis of meat quality attributes, such as texture and tenderness, colour, water-holding capacity and flavour development. Chapters on the nutritional quality of meat and meat sensory evaluation complete the section. Part two discusses significant insights into the biology of meat quality obtained from genomic and proteomic perspectives, with chapters focussing on different types of meat. Parts three and four then review production and processing strategies to optimise meat quality, considering aspects such as production practices and meat nutritional quality, dietary antioxidants and antimicrobials, carcass interventions, chilling and freezing and packaging. Methods of meat grading and quality analysis are also included. With its distinguished editors and international team of contributors, Improving the sensory and nutritional quality of fresh meat is a standard reference for those industrialists and academics interested in optimising meat quality. - Reviews methods to improve meat sensory and nutritional quality considering the effects of different production practices such as chilling, freezing and packaging - Analyses the scientific basis of meat quality attributes covering texture, tenderness, colour and water-holding capacity - Examines production and processing strategies to optimise meat quality, including the current state of development and future potential
