Cette thèse présente une étude de la production de baryons dans les collisions à deux photons effectuée au CERN sur l'expérience L3. La première partie est consacrée à l'étude de la production inclusive de baryons [Lambda], [Xi]−, [Xi]0(1530) et [Omega]−. Les données sont comparées aux prédictions de plusieurs générateurs Monte Carlo ainsi qu'aux mesures obtenues dans les réactions d'annihilation électron-positron. La seconde partie est dédiée à l'analyse de la production exclusive de paires proton-antiproton, lambda-antilambda et sigma0-antisigma0. Aucun des différents modèles théoriques actuels (trois quarks, quark-diquark, échanges de pôles...) ne parvient à reproduire la totalité des résultats. Une recherche sur la production de baryons exotiques, le pentaquark [theta]+, est finalement présentée dans la partie finale. Aucun signal n'est observé et une limite supérieure sur la production de pentaquark est calculée.
