Book Description
Excerpt from Pricing and Competition on Beef in Los Angeles This process of dynamic change and adjustment is especially evident in Los Angeles. Here, beef production and distribution are being influenced by an unusually rapid growth in population, changed income and consumption habits, the rapid development of a large number of retail food chains and independent supermarkets, the establishment of a commercialized cattle feeding industry, introduction and widespread use of Federal carcass grades, and transition of the california-arizona beef industry from a deficit supply area to one with occasional surpluses. These developments have led to concern regarding their economic effects on producers, consumers, and various elements of the beef trade. Questions raised usually involve the retail food chains, the Federal grades for beef, effects of the shift in supply-consumption balances, or specific marketing practices. Most of the concern, however, derives from one of two sources (1) Change requires adjustments which may be painful or difficult for some segments or firms in the market; and (2) the process of change may be handi capped by lack of knowledge or understanding of the forces generating change, the changes themselves, or their effects. Retail Meat Prices in Perspective (Classic Reprint)

Retail Meat Prices in Perspective (Classic Reprint) PDF Author: James E. Nix

Book Description
Excerpt from Retail Meat Prices in Perspective The beef cattle industry is at a critical point in the current cattle inventory cycle. Producers sustained heavy financial losses during most of the last 4 years as their costs held at relatively high levels while cattle prices were low. These losses, combined with droughts in many areas of the United States, caused a large reduction of the cattle herd. That reduction provided consumers with record large beef supplies at relatively low prices. The total cattle inventory was reduced from 132 million head in 1975 to million on January 1, 1978. A further reduction is expected this year. Initially, a herd sell-off increases beef supplies; sustained, it lowers the calf crop and resulting beef supplies. Beef production is now declining and beef prices are rising. This is putting producers back into a favorable financial situation. Meat Planet

Meat Planet PDF Author: Benjamin Aldes Wurgaft
Publisher: Univ of California Press
ISBN: 0520379004
Category : Cooking
Languages : en
Pages : 262

Book Description
In 2013, a Dutch scientist unveiled the world’s first laboratory-created hamburger. Since then, the idea of producing meat, not from live animals but from carefully cultured tissues, has spread like wildfire through the media. Meanwhile, cultured meat researchers race against population growth and climate change in an effort to make sustainable protein. Meat Planet explores the quest to generate meat in the lab—a substance sometimes called “cultured meat”—and asks what it means to imagine that this is the future of food. Neither an advocate nor a critic of cultured meat, Benjamin Aldes Wurgaft spent five years researching the phenomenon. In Meat Planet, he reveals how debates about lab-grown meat reach beyond debates about food, examining the links between appetite, growth, and capitalism. Could satiating the growing appetite for meat actually lead to our undoing? Are we simply using one technology to undo the damage caused by another? Like all problems in our food system, the meat problem is not merely a problem of production. It is intrinsically social and political, and it demands that we examine questions of justice and desirable modes of living in a shared and finite world. Benjamin Wurgaft tells a story that could utterly transform the way we think of animals, the way we relate to farmland, the way we use water, and the way we think about population and our fragile ecosystem’s capacity to sustain life. He argues that even if cultured meat does not “succeed,” it functions—much like science fiction—as a crucial mirror that we can hold up to our contemporary fleshy dysfunctions.
