The curd (head) of heading broccoli is white and compact, like cauliflower. Heading broccoli takes longer to mature than cauliflower, however. Sprouting broccoli has green heads that are branched, rather than com pact. In this publication cauliflower refers to both cauliflower and heading broccoli; broccoli refers only to sprouting broccoli.
