Depuis sa création en 1979, Action contre la Faim a vu la faim changer de visage. Dans les années 1970, la faim est plutôt associée au sous-développement. Lutter contre la faim consiste alors à creuser des puits, apporter une assistance technique aux cultivateurs, organiser le développement. Action contre la Faim a été de ce combat. Puis, progressivement, l'association a été amenée à intervenir dans des contextes de crise, les victimes de la malnutrition sévère se trouvant désormais dans le sillage de conflits armés, d'épidémies, de convulsions politiques...
