Abstract: This study undertook to examine the population-specific reliability and validity of previously published nutrition assessment questionnaires, and to examine the possible relationship of resting metabolism and body fatness to nutrition attitudes and habits. Thirty eight female subjects (19-25 years), each of whom completed a three day food record and the Nutrition Electronic Tool (NET), were evaluated. Resting metabolic rate (RMR) and body fatness were measured using indirect calorimetry and air displacement technologies. Thirty two subjects repeated the questionnaire to document four week reliability. Excellent overall reliability for the NET was showii using the Pearson correlation (r>0.8). Cronbach's alpha values >0.7 demonstrated acceptable levels of internal reliability. The validity of the NET was investigated by comparing various questionnaire responses to analyses results of participants' food records. Many significant associations strengthen the validity of the tool. A new linear multivariate regression model containing four significant predictors of RMR was developed; lean mass, age, meat preference and low-fat dairy use. This model explained approximately 53% (R2=.528) of the variability in RMR. Analysis of validity and reliability data leads us to believe the NET instrument is valid in this population. The regression model identified from this sample to predict resting metabolic rate included two variables from well-known RMR predictive equations, lean mass and age. However, age was positively correlated with RMR in our research. Inclusion of low-fat dairy and meat variables suggest that a higher intake of low-fat dairy products and a higher preference for meat have a positive relationship to RMR.

As new college students become autonomous eaters, they may independently develop behaviors related to food that fulfill both biological and cultural purposes. I report here on the results of a biocultural, mixed-methods study of 21 students' first term of college residence. Interview data and anthropometric measurements permit exploration of the interaction between a shift in participants' cultural surroundings, physical condition, and food-related thoughts and actions. Participants' goals of fulfilling their student responsibilities and maintaining social relationships predominantly dictated when, where, and what they ate, while their level of satisfaction with these behaviors was associated with whether their actions were consistent with personal definitions of "healthy." Participants who demonstrated a conscious effort to eat in a healthy manner generally expressed the highest satisfaction with their food-related behaviors, but did not all experience similar changes in their physical conditions. Because participants' goals influenced their satisfaction with their eating behaviors, they may affect participants' behaviors in the future. Continued research should investigate how the goals that individuals articulate but do not act on during this period in their life course may influence their health and behaviors later in their lives.

The primary purpose of fitness and body composition standards in the U.S. Armed Forces has always been to select individuals best suited to the physical demands of military service, based on the assumption that proper body weight and composition supports good health, physical fitness, and appropriate military appearance. The current epidemic of overweight and obesity in the United States affects the military services. Physical inactivity is a key determinant of health across the lifespan. A lack of activity increases the risk of heart disease, colon and breast cancer, diabetes mellitus, hypertension, osteoporosis, anxiety and depression and others diseases. Emerging literature has suggested that in terms of mortality, the global population health burden of physical inactivity approaches that of cigarette smoking. The fact that about 30-40% of the adults in the Western world are overweight or obese testifies to the frequency of the disturbances in body weight regulation. Scientists have established that caloric intake, macronutrient composition of the diet, basal and resting metabolic rate, thermic response to food, energy expenditure associated with movement and physical activity, and preferential storage of the surplus of calories as fat or lean tissues are critical determinants of energy balance and body weight. While much has been learned, the field is poised for major advances with the advent of a variety of imaging techniques, progress in quantitative and molecular genetics, use of transgenic rodent models and of breeding experiments with informative inbred strains, availability of stable isotopes for metabolic and behavioral studies, and a growing number of useful experimental animal and human models. This volume takes an integrative approach to obesity. It is structured around four major topics: (1) the animal and human models currently available for the study of body weight regulation with their strengths and limitations, (2) the molecular and genetic basis of the regulation of body weight, (3) the metabolic and physiological mechanisms involved, and (4) the behavioral and social determinants.
