Book Description
Self published by the founder of the New York Cooking School, this forty-page leaflet was designed to educate new immigrant families with low incomes about preparing good, healthy meals. As the industrial revolution gathered steam and reformers focused on living conditions of the poor and disadvantaged, economical themes began to appear in cookbooks, and Corson’s pamphlet was extremely popular. In addition to numerous recipes and food preparation techniques, the book contains a “Daily Bill of Fare for One Week”—seven days of menus that cost $2.53 in total leaving a balance of $.62 for extra bread, milk, and butter. The little volume also contains favorable reviews of the book from contemporary publications, and an “ad” for six other books by Corson. The title page contains the following quote from the author: “This little book may not be a welcome guest in the home of the man who fares abundantly every day; it is not written for him; but to the working man, who wants to make the best of his wages, I pray it may bring help and comfort.” This facsimile edition of Juliet Corson’s Fifteen Cent Dinners for Families of Six was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts. Founded in 1812 by Isaiah Thomas, a Revolutionary War patriot and successful printer and publisher, the Society is a research library documenting the life of Americans from the colonial era through 1876. The Society collects, preserves, and makes available as complete a record as possible of the printed materials from the early American experience. The cookbook collection includes approximately 1,100 volumes.

Book Description
Juliet Corson (1841-1897) was a leader in cookery education in the latter half of the 19th century in the United States. She contributed to a weekly column in the New York Times that ran for five years, 1875-1880. In 1877, to help the poor learn how to cook on tight budgets, she authored and distributed a 33-page booklet Fifteen Cent Dinners for Families of Six, which became quite popular. After 1883, she was actively engaged, with intervals of illness, in writing and in lecturing throughout the United States. In Philadelphia, Montreal, and Oakland, California, her efforts led to the teaching of cookery in the public schools.

Book Description
"The wide publicity which the press in different sections of the country has given to my offer to show workingpeople earning a dollar and a half, or less, per day, how to get a good dinner for fifteen cents, has brought me a great many letters from those who earn more, and can consequently afford a more extended diet. In response to their requirements I have written this book, which I hope will be found servicable in that middle department of cookery it is designed to occupy, where we begin to look for more than the absolute necessaries of life; it is a practical guide to the economical, healthful, and palatable preparation of food, and will serve to show that it is possible to live well upon a very moderate income. It is necessary to repeat in this book some of the directions given in the work on "FIFTEEN CENT DINNERS;" but I hope their reappearance will be pardoned on the ground of their usefulness, and also because the first book will fail to reach many for whom this one is intended."-The Author, 1878(cover photograph courtesy of Denise Hunter)As this is a reissue of a vintage curiosity piece and formatted to mass market paperback, the index may or may not calibrate to the referring text but was left fully intact for the full enjoyment of this charming and unusual little book.
