Les expérimentations concernant la fermentation d'un jus d'ananas, la mise au point d'un système de culture continue par bioréacteur à membrane et l'utilisation d'un outil de simulation pour la représentation des résultats expérimentaux, constituent l'essentiel de ce travail de recherche l'ananas a fait l'objet d'une étude très approfondie et a conduit à l'isolement, l'identification et la multiplication d'une souche levurienne naturelle pouvant servir de ferment pour la réalisation d'une boisson alcoolisée (degré alcoolique 3 à 6%vol.) Des expériences cinétiques menés en réacteur discontinu ont permis : - de déterminer la faisabilité technologique de la fermentation d'un jus d'ananas ; - de définir les conditions optimales d'une telle opération ; - et d'établir le meilleur compromis procédé/matières premières : qualité organoleptique du produit final les essais en bioréacteur à membrane, ont rendu possible la validation de la technique du couplage fermentation-filtration pour la production d'une biomasse naturelle l'augmentation de la concentration cellulaire et la fabrication en continu d'une boisson fermentée obtenue directement filtrée stérile. Les résultats des analyses sensorielles démontrent que les produits finis sont de qualité organoleptique satisfaisante, c'est-à-dire, exempts de défauts majeurs au gout. Ces boissons se rapprochent des cidres ; elles ont en plus la particularité de conserver le parfum et la saveur du fruit d'origine sans addition d'arôme. Grace à un outil de simulation bio log gic, développé au laboratoire de génie et informatique chimiques (GIC) de l'Ecole Centrale Paris (ECP), le changement de variables, prenant comme référence de calcul les résultats expérimentaux obtenus, et l'extrapolation de ces données sont possibles
