Le phénomène d'évaporation intervient dans de nombreux processus naturels et applications industrielles (refroidissement, séchage). Ce mémoire traite de l'évaporation d'une goutte posée pour une meilleure compréhension des mécanismes physico chimiques régissant les transferts couplés chaleur - masse. Les cas étudiés ont porté sur une goutte d'eau bidistillée (5 mm3 [inférieur ou égal] V [inférieur ou égal] 70 mm3) posée sur deux surfaces chauffées (30 °C [inférieur ou égal] Tp [inférieur ou égal] 90 °C) de mouillabilité différente (aluminium et PTFE) par des méthodes optique et thermique. Les résultats expérimentaux ont permis de montrer que l'aplatissement des gouttes par les effets de gravité est sans influence dans la cinétique de l'évaporation. La nature et l'état de la surface n'influencent que l'angle de contact et le diamètre de mouillage initial. L'évaporation semble se produire préférentiellement au niveau de la ligne triple. Des simulations numériques du phénomène ont été réalisées et les résultats comparés à ceux obtenus par l'expérience
