Book Description
Excerpt from Economic Effects of U. S. Grades for Beef The widespread adoption of Federal beef grades is only one force among many bringing about changes in the production and marketing of beef. Buying and selling beef on the basis of Federal grades have proved particularly advantageous to mass merchandising agencies. The policies and practices of firms in the various segments of the meat wholesaling industry, which includes packers, wholesalers, and retailers, tend to reflect their beliefs and attitudes concerning the effects of the Federal grading of beef. This report is based in part on a sample survey of national packers, independent packers, wholesale distributors, and chain and independent retail ers of meat. The sample was designed so as to adequately represent attitudes on grading and branding of beef, and the uses made of Federal grades and proprietary brands in each of the 4 regions of the Nation. In each major respondent category, except national packers, two-thirds or more of the beef sold for fresh consumption was stamped with U. S. Grades. Some respondents in each classification expressed surprise that there remained any question about the usefulness and desirability of uniform Federal grade standards for beef. And in 1926, after numerous public hearings, they were further revised and were issued as the official United States standards for grades of carcass beef. Book Description
Excerpt from Pricing and Competition on Beef in Los Angeles This process of dynamic change and adjustment is especially evident in Los Angeles. Here, beef production and distribution are being influenced by an unusually rapid growth in population, changed income and consumption habits, the rapid development of a large number of retail food chains and independent supermarkets, the establishment of a commercialized cattle feeding industry, introduction and widespread use of Federal carcass grades, and transition of the california-arizona beef industry from a deficit supply area to one with occasional surpluses. These developments have led to concern regarding their economic effects on producers, consumers, and various elements of the beef trade. Questions raised usually involve the retail food chains, the Federal grades for beef, effects of the shift in supply-consumption balances, or specific marketing practices. Most of the concern, however, derives from one of two sources (1) Change requires adjustments which may be painful or difficult for some segments or firms in the market; and (2) the process of change may be handi capped by lack of knowledge or understanding of the forces generating change, the changes themselves, or their effects.
