In the Louisiana Purchase Exposition at St. Louis, in 1904, another grand opportunity was presented to try out the different dairy breeds on a world's stage. This dairy demonstration was conducted by experts representing the United States Department of Agriculture and the State Agricultural Colleges. Jersey, Holstein, Brown_Swiss and Shorthorn herds were entered. Once more, in an impartial pub. lic test, were the claims made for the J crsey demonstrated to be well founded., The basis of the awards at St. Louis was economic production. The Jerseys proved to be the most economic producers of butterfat and butter and of milk for all purposes of dairying. In butter.production, the leading cow was a Wisconsin Jersey; the best four were Jerseys, fourteen of the best fifteen were Jerseys; sevcnteen of the best twenty were Jerseys; nineteen of the best twenty_five were J erscys; and the best herd was the Jersey herd. The Jerseys returned one pound of butter_fat for every twelve pounds nutriment they. consumed. The Holsteins required The Champion at St. Louis Exposition, 1904, was bred in Visconsin. 14.839 pounds nutriment per pound of fat produced, the Short_ horns required 15.52 pounds, and the Brown Swiss 16.919 'pounds. To produce a pound of milk solids the Jerseys consumed 2.955 pounds nutriment; the Holsteins required 3.283 pounds; the Shorthorns 3.421 pounds; and the Brown Swiss 3.638 pounds. The most economic producers of the seventy cows of all breeds in the test was a Jersey, and she was followed in order by thirteen other Jerseys, there being no place won by a cow of any other breed until the fifteenth.
