We investigate the process of the diffractive production of the J/[psi] vector meson in the ultraperipheral proton-lead collisions at LHC and FCC-hh energies. We focus on the diffractive process at large momentum transfer, -t, when the proton or a lead nucleus dissociates and its remnants are still separated by the large rapidity gap from the vector meson. The process is directly sensitive to the properties of the Pomeron, a color singlet composite of gluons, which is responsible for the of the presence rapidity gap. The energy and t dependence of the pomeron is described by the solution to the non-forward BFKL equation. The ultraperipheral collisions between protons and lead at LHC allow for a study of this process in a large rapidity range. The rapidity distributions of J/[psi] are computed in the case when the Pomeron interacts with the proton as well as in the case when it couples to the nucleus. Predictions for the energies of the FCC hadron-hadron collider are also made.

This thesis provides a comprehensive view of the physics of charmed hadrons in high-energy proton-proton and heavy-ion collisions. Given their large masses, charm quarks are produced in the early stage of a heavy-ion collision and they subsequently experience the full system evolution probing the colour-deconfined medium called quark-gluon plasma (QGP) created in such collisions. In this thesis, the mechanisms of charm-quark in-medium energy loss and hadronisation are discussed via the measurements of the production of charm mesons with (Ds+) and without (D+) strange-quark content in different colliding systems, using data collected by the ALICE experiment at the CERN LHC. The participation of the charm quark and its possible thermalisation in the QGP are studied via measurements of azimuthal anisotropies in the production of D+ mesons. Finally, the prospects for future measurements with the upgraded ALICE experimental apparatus and with more refined machine learning techniques are presented.

Coherent vector meson production in peripheral nucleus-nucleus collisions is discussed. These interactions may occur for impact parameters much larger than the sum of the nuclear radii. Since the vector meson production is always localized to one of the nuclei, the system acts as a two-source interferometer in the transverse plane. By tagging the outgoing nuclei for Coulomb dissociation it is possible to obtain a measure of the impact parameter and thus the source separation in the interferometer. This is of particular interest since the life-time of the vector mesons are generally much shorter than the impact parameters of the collisions.
