The global coronavirus pandemic is revealing major weaknesses, inequities and system-wide risks in global food systems, giving renewed urgency to foster pathways to greater food system sustainability and resilience. Due to rising unemployment, supply chain disruptions and other responses to the pandemic, such as disruptions to social assistance programs in some countries, predictions suggest a near doubling of food insecurity globally. Nutritional changes are also occurring, as food availability and access changes, leading to substitution of dry, canned or processed foods for healthier, fresh ingredients, for some communities, and the reverse for others. These food security and nutritional changes are likely to be as impactful on human health as the virus itself. As a system-wide shock, the pandemic reveals weaknesses of global supply chains. The media highlighted empty supermarket shelves alongside food dumping in situations where producers locked into disappearing food service outlets were unable to access new markets. Farmers with long-standing reliance on migrant agricultural labor that can no longer travel across international borders under lockdown struggle to access support for the upcoming harvest season. The pandemic highlights well-known inequities for marginalized food systems employees; as essential workers are exposed to greater risks of contracting the virus in food-processing, agricultural and grocery store settings, but have little choice in accepting these conditions in order to keep these low-paying jobs. The pandemic reinforces another well-known food system inequity: marginalized and impoverished minorities often suffer from diet-related diseases (i.e. cardiovascular diseases, diabetes) and/or malnutrition that place them at greater risk of morbidity and mortality from the coronavirus. Lockdowns and border closures are reducing economic opportunities such as day labor and agricultural markets in some regions, such as much of Africa; ensuing risks of food and nutrition insecurity for vast segments of the population threaten to set back development, increase social conflict, and catalyze migration. Finally, the current pandemic shines a spotlight on the systemic risk of infectious diseases to emerge and become globalized through local bushmeat markets and international wildlife trade, and how wildlife hunting and trade is influenced by land use changes, including by industrial agriculture. At the same time, adaptive responses to the coronavirus illustrate how more resilient and sustainable food systems could evolve going forward. To avoid supply chain disruptions, communities are increasing their reliance on local food systems, including an increase in urban gardening and community-supported agriculture programs. Small-scale farmers are innovating to connect with buyers and with each other, including through new online marketing initiatives. Entrepreneurs are identifying foods that would otherwise be wasted and directing them to food banks. Retailers and wholesalers are re-configuring their distribution networks to shift food to where it is needed most. Food pantries, local producers and food businesses are also collaborating with municipal governments to address food security gaps arising from COVID-19 impacts.

It is plausible that the coronavirus disease 2019 pandemic and related lifestyle changes affected dietary patterns, but existing studies have limitations owing to a cross-sectional design. Using longitudinal data, we examined dietary changes in people due to the pandemic and related lifestyles. We conducted an online survey on lifestyle changes during the pandemic from April 30 to May 8, 2020, among users of a health app called CALO mama provided in Japan. We retrieved and linked the dietary data for 5,929 participants from January 1 to May 13, 2020. Generalized linear mixed models were used to estimate the frequencies of food intake associated with the pandemic and lifestyles. During the governmental declaration of a state of emergency, the frequency of intake of self-made meals (incidence rate ratio [IRR] = 1.05), vegetables (IRR = 1.06), and snacks increased (IRR = 1.04). Similarly, working from home was associated with increased rates of intake of self-made meals (IRR = 1.02), vegetables (IRR = 1.02), fruits (IRR = 1.06), and snacks (IRR = 1.04). In contrast, working hours (self-made meals: IRR = 0.997, fruits: IRR = 0.99, snacks: IRR = 0.99 [per hour]), time spent on childcare (self-made meals: IRR = 0.99, vegetables: IRR = 0.99, fruits: IRR = 0.98 [per hour]), and depressive symptoms (self-made meals: IRR = 0.93, vegetables: IRR = 0.92, fruits: IRR = 0.90) tended to be negatively associated with the frequency of food intake. This study showed that the pandemic affected dietary patterns in various ways. It is important to record and notice such changes and modify them to the recommended balance during a prolonged pandemic to ensure healthy eating habits.

All aspects of feeding and nourishing people: growing, harvesting, packaging, processing, transporting, marketing, and consuming food are part of the food system. Even before the COVID-19 pandemic, food systems faced many challenges such as hunger increases, which affected up to 811 million people as of 2020, while healthy diets were unaffordable for at least 3 billion people. More than 80% of the population affected by hunger and 95% of people unable to afford a healthy diet were found in Asia and Africa. Transformation of the global food system is clearly needed if we wish to embed equity, sustainability, and health as priorities in food provision and consumption. Some of these transformations will be facilitated through new technologies, while others will require public policy shifts, changes in the private agro-food industry, actions by civil society, and behavioral changes by individuals. In this dynamic context, technology actors and the consumers they serve sit at an important nexus within the food system, and have the potential to make decisions that cut across the challenges and opportunities to improve sustainable food system outcomes. Although food security has improved in developed countries, many countries, particularly low- to middle-income countries (LMIC), suffer from significant food insecurity challenges. In addition, food production, accessibility, and availability have been further impacted due to the COVID-19 outbreak, causing growing global concerns regarding food security, especially within the most vulnerable communities. Moreover, the transformation of food systems for addressing healthy nutrition, food insecurity, and public health issues is a global concern. Food security and nutrition systems are directly related to human well-being and global stability, particularly in a time when diets transition toward increased reliance upon processed foods, increased fast-food intake, high consumption of edible oils, and sugar-sweetened beverages, lack of physical activities, and increased lifestyles worldwide. These changes in lifestyle continue to contribute to the growing pandemic of non-communicable diseases such as obesity, diabetes, hypertension, and cardiovascular diseases are clearly noticed across the globe. The study of nutrition systems, food security, and the roles of technological advances, especially in LMIC, is considered the major factor in understanding food transition and population health. Physical inactivity threatens LMIC public health as it is a prime behavioral risk factor associated with major non-communicable diseases such as coronary heart disease, type 2 diabetes, and breast and colon cancer. Its long-term impacts increasingly burden national economies. Decreasing its prevalence is paramount toward decreasing premature mortality and restoring healthy populations. In its most recent iteration of a global action plan for the prevention of non-communicable diseases, the World Health Organization established voluntary global targets to reduce physical inactivity by 10%. Currently, limited published systematic analysis of physical inactivity prevalence among Muslim-majority countries exists. Existing literature is concentrated on Arab countries, which represent less than half of all Muslim nations. To date, however, pan-Islamic physical inactivity data have not been reported. Doing so can potentially galvanize religion-specific agencies (e.g., Islamic Relief Worldwide, Organization of Islamic Cooperation) to support efforts aimed at decreasing physical inactivity.
