To evaporate the juice and reduce it to syrup. The syrup is next concentrated to melada by more rapid boiling at an increased temperature, which should not exceed 285 to 238 Fahrenheit, at which point the best results are usually obtained. During the process of evaporation and concentration, acidity in excess is again corrected by the use of lime, and feculente that rise are removed by skimming. Annotation Like its predecessor, this important new work is focused on the connection between trade and investment on the one hand and U.S. foreign policy on the other. David Pletcher describes the trade of the United States with the Far East, the islands of the Pacific, and the northwest coast of North America from 1784 (the year of the first American trading expedition to China) to 1844 (the year of the first trade treaty with China, followed immediately by the U.S. acquisition of Oregon and California). He then traces the growth of trade and investment in Alaska, Hawaii, and the South Pacific from 1844 to 1890 and proceeds to do the same for China, Japan, and Korea. In the ensuing chapters, Pletcher covers the 1890s, including the annexation of Hawaii, the Sino-Japanese War, the acquisition of the Philippines, and the Open Door policy in China. He concludes that the American expansion across the Pacific and into the Far East was not a deliberate, consistent drive for economic hegemony but a halting, experimental, improvised movement, carried out against determined opposition and indifference and dotted with setbacks and failures. The fourth and final volume of the Hawaiian National Bibliography, 1780-1900, records the most volatile period in Hawaii's history. American business interests and the desire for a constitutional monarchy were pitted against the desire of the monarchs, King Kaläkaua and Queen Liliuokalani, to strengthen the power of the throne. The convulsions of the 1887 and 1889 revolutions were succeeded by the overthrow of the monarchy on January 17, 1893. Documents revealing the struggle over annexation, beginning in 1893, and the counterrevolution of 1895 are an important component of this volume. Annexation in 1898 was followed by a two-year period during which functions of government and laws were altered to conform to those of the United States. After the organic act became effective in 1900, vestiges of monarchical Hawaii disappeared and the history of the Territory of Hawaii unfolded. As with the previous volumes, Volume 4 is a record of printed works touching on some aspect of the political, religious, cultural, or social history of the Hawaiian Islands. A valuable component of this series is the inclusion of newspaper and periodical accounts, and single-sheet publications such as broadsides, circulars, playbills, and handbills.
